Ingredients

  • 1.3kg Coles Australian RSPCA Approved Whole Chicken
  • 1/2 cup (125ml) medium peri-peri sauce
  • 500g kipfler potatoes, thickly sliced diagonally
  • 2 zucchini, thickly sliced diagonally
  • 1 cup coriander leaves

Method

  • Step 1 Preheat oven to 200C. Pat chicken dry with paper towel. Place the chicken, breast-side down, on a clean work surface. Use kitchen scissors or poultry shears to cut along each side of the backbone to remove. Discard.
  • Step 2 Place the chicken breast-side up. Use the palm of your hand to push the breast down to flatten. Tuck the wings under the chicken. Place in a large roasting pan. Brush half the peri-peri sauce evenly over the chicken. Arrange the potato around the chicken and brush with remaining sauce. Season well.
  • Step 3 Roast, turning potato occasionally, covering the chicken with foil if necessary to prevent overbrowning, for 45 mins or until golden brown. Arrange the zucchini around the chicken in the pan.
  • Step 4 Bake for 15 mins or until the juices run clear when the chicken is pierced in the thickest part of the thigh and the zucchini is tender. Sprinkle with coriander leaves.
