Ingredients

  • 2 sheets ready-rolled shortcrust pastry, just thawed
  • 1/4 cup (55g) caster sugar
  • 4 large just-ripe plums, stoned, cut into wedges
  • 1 tablespoon cornflour
  • 1 Coles Australian Free Range Egg, lightly whisked

Method

  • Step 1 Preheat oven to 200°C. Line an 18cm (base measurement) fluted tart tin, with removable base, with 1 pastry sheet. Trim the edge. Line with baking paper. Fill with pastry weights or rice. Bake for 10 mins. Remove paper and weights. Bake for 10 mins or until light golden.
  • Step 2 Reserve 2 tablespoons of the sugar. Combine plum, cornflour and remaining sugar in a bowl. Spoon into the pastry case. Bake for 20-25 mins or until plum softens.
  • Step 3 Meanwhile, line a baking tray with baking paper. Use heart-shaped cutters to cut hearts from remaining pastry. Place on the lined tray. Brush with egg. Sprinkle with reserved sugar. Bake for 15-20 mins or until golden brown.
  • Step 4 Arrange the pastry hearts over the tart. Cut into wedges to serve.
