Ingredients

  • 1 1/4 cups icing sugar
  • 3/4 cup plain flour
  • 1 cup almond meal
  • 3/4 cup dark chocolate bits
  • 1/2 cup macadamia nuts
  • 6 egg whites
  • 185g butter melted

Method

  • Step 1 Preheat oven to moderate, 180C. Lightly grease 8 recesses of a mini loaf pan.
  • Step 2 Sift icing sugar and flour together into a large bowl. Blend in almond meal, 1/2 cup chocolate chips and the macadamia nuts.
  • Step 3 In a small bowl, lightly whisk egg whites with a fork until frothy. Add to dry ingredients and mix lightly.
  • Step 4 Blend in butter, stirring until combined. Divide mixture among prepared recesses. Sprinkle each with remaining chocolate chips.
  • Step 5 Bake for 15-20 minutes until golden and cooked when tested with a skewer. Cool in pan for 5 minutes before turning onto a wire rack to cool completely.
