Ingredients

  • 325g ctn buttermilk pancake shake
  • 30g butter
  • 2 red apples, thinly sliced into rounds
  • 250g mascarpone
  • 1/2 teaspoon ground cinnamon
  • Maple syrup, to drizzle

Method

  • Step 1 Prepare pancake shake following packet directions. Melt 5g of the butter in a 16cm round non-stick frying pan over medium-low heat until foaming. Add 3-4 apple rounds to fit in the pan and cook for 1 minute each side or until softened slightly.
  • Step 2 Pour a sixth of the pancake batter over the apples and cook for 2 minutes or until bubbles appear on the surface. Turn and cook until golden. Repeat with remaining butter, apple and pancake batter.
  • Step 3 Combine mascarpone and cinnamon in a bowl. Top pancakes with mascarpone mixture and serve drizzled with maple syrup.
