Ingredients

  • 500g Coles Australian Pork Mince
  • 1 tablespoon fennel seeds
  • 3 garlic cloves, crushed
  • 2 tablespoons fresh oregano, chopped
  • 1/3 cup (35g) packaged breadcrumbs
  • 1 Coles Australian Free Range Egg, lightly whisked
  • 2 small red apples, thickly sliced crossways
  • 2 small sweet potatoes, thickly sliced crossways
  • 600g Kent pumpkin, seeded, cut into wedges
  • 1 zucchini, thickly sliced diagonally
  • Oregano sprigs, extra, to serve
  • 2 x 250g pkts microwavable brown rice and quinoa mix, heated
  • Lemon wedges, to serve

Method

  • Step 1 Preheat oven to 220C. Line a large baking tray with baking paper.
  • Step 2 Combine the mince, fennel seeds, garlic, chopped oregano, breadcrumbs and egg in a bowl. Season. Roll the mince mixture into 16 even-sized balls.
  • Step 3 Place the apple, sweet potato, pumpkin and zucchini on the prepared tray. Top with the meatballs. Bake for 30 mins or until meatballs are cooked through and apple and vegetables are tender. Sprinkle with extra oregano. Serve with the rice mixture and lemon wedges.
