Ingredients

  • 3 damper rolls
  • 2 large avocados, chopped
  • 2 tablespoons fresh lime juice
  • 2 green shallots, thinly sliced
  • 1/4 cup fresh coriander leaves, chopped, plus whole leaves, extra, to serve
  • 310g can corn kernels, drained
  • 85g (1/4 cup) corn relish
  • 1 tablespoon pepitas
  • Lime wedges, to serve

Method

  • Step 1 Preheat oven to 180C/160C fan forced. Slice the damper rolls in half horizontally, then cut each half into 8 wedges. Place wedges in a single layer on 2 baking trays and spray lightly with oil. Bake for 10 minutes or until crisp and golden.
  • Step 2 Combine the avocado, lime juice, shallot and coriander in a bowl and season with salt. Transfer to a shallow serving bowl.
  • Step 3 Combine the corn kernels and corn relish in a separate bowl. Spoon over the avocado mixture. Sprinkle with pepitas and extra coriander leaves. Serve with lime wedges and the damper dippers.
