  • 4 shortcut bacon rashers
  • 2 ripe avocados
  • 1 tablespoon lime juice
  • 100g feta, crumbled
  • 4 slices sourdough bread, toasted
  • 12 semi-dried tomatoes
  • Lime halves, to serve

Method

  • Step 1 Heat oil in a frying pan over medium- high heat. Add bacon. Cook for 2 minutes each side or until browned and crisp. Transfer to a plate lined with paper towel.
  • Step 2 Roughly mash avocado with lime juice. Add fetta. Season with salt and pepper. Gently stir until just combined.
