Ingredients

  • 2 x 340g packets golden buttercake cake mix
  • 2 tablespoons lilac sugar pearl cachous
  • 24 mixed baby icing cake toppers

Buttercream icing

  • 250g butter, softened
  • 3 cups icing sugar mixture
  • 2 tablespoons milk
  • Blue, pink and yellow food colourings

Method

  • Step 1 Preheat oven to 180°C/160°C fan-forced. Line two 12-hole, 1/3 cup-capacity muffin pans with paper cases.
  • Step 2 Prepare packet cakes following packet directions. Spoon 1/4 cup mixture into each paper case. Bake for 25 minutes or until cooked through. Stand cakes in pans for 5 minutes. Transfer to a wire rack to cool completely.
  • Step 3 Make icing: Using an electric mixer, beat butter in a bowl until pale. Gradually add icing sugar mixture and milk, beating constantly until combined.
  • Step 4 Divide icing between 3 bowls. Tint 1 portion pale blue, 1 portion pale pink and remaining portion pale yellow with food colourings. Spread cake tops with icing. Decorate with cachous and cake toppers. Serve.
