Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 250g Primo Rindless Short Cut Bacon, finely chopped
  • 30g pkt taco seasoning
  • 400g can diced tomatoes
  • 400g can red kidney beans, rinsed & drained
  • 2 tablespoons sliced jalapenos, chopped (optional)
  • Corn chips, to serve
  • 80g grated cheese
  • 1 avocado, mashed, to serve
  • Sour cream, to serve
  • Fresh coriander, to serve

Method

  • Step 1 Preheat oven to 180C/160C fan-forced. Heat oil in a large non-stick frying pan. Add onion and cook, stirring for 1-2 minutes. Add bacon and cook stirring for 4-5 minutes until lightly golden. Add seasoning. Cook for 1 minute.
  • Step 2 Stir in tomatoes, beans and jalapenos if using. Simmer over medium low heat for 5-10 minutes or until the mixture has thickened.
  • Step 3 Divide half the corn chips between heatproof serving bowls. Top with bacon mixture. Add the rest of the corn chips and scatter with cheese. Place the plates on an oven tray and bake for 5-10 minutes or until cheese has melted. Top with avocado, sour cream and scatter with coriander to serve.
