Ingredients

  • 100g dark chocolate, chopped
  • 100g butter, chopped
  • 1 cup caster sugar
  • 2 eggs
  • 2 tablespoons Baileys Irish Cream
  • 1 teaspoon vanilla extract
  • 1 cup plain flour
  • 2/3 cup walnuts, chopped

Baileys ganache

  • 150g dark chocolate, chopped
  • 1 1/2 tablespoons Baileys Irish Cream
  • 2/3 cup thickened cream

Method

  • Step 1 Place chocolate and butter in a microwave-safe bowl. Microwave on HIGH (100%) for 1 minute or until melted. Stir in sugar, eggs, Baileys, vanilla, our and 1/2 cup walnuts. Pour into a 4cm-deep, 23cm square microwave-safe silicone cake pan.
  • Step 2 Microwave on HIGH (100%) for 6 minutes or until just cooked in the centre. Stand for 5 minutes in microwave. Cool completely in pan. Turn, top-side up, onto a board lined with baking paper.
  • Step 3 Make Baileys ganache: Place chocolate, Baileys and 1/3 cup cream in a microwave- safe bowl. Cook on HIGH (100%) for 1 minute 30 seconds or until melted. Stir to combine. Set aside to cool for 1 hour. Add remaining cream. Whisk until soft peaks form (don’t over-whisk).
  • Step 4 Spread brownie with Baileys ganache. Sprinkle with remaining walnuts. Cut brownie into 16 pieces. Serve.
