Ingredients

  • 200g round double brie
  • 2 large sprigs fresh thyme
  • 1 tablespoon extra virgin olive oil
  • 1 small brown onion, halved, thinly sliced
  • 1/4 cup pistachio kernels, roughly chopped
  • 1/4 cup honey
  • Assorted crackers, to serve

Method

  • Step 1 Preheat oven to 150C/130C fan-forced. Line a baking tray with baking paper.
  • Step 2 Place brie on tray. Top with thyme. Season with salt and pepper. Bake for 15 to 20 minutes or until brie is soft to touch in centre.
  • Step 3 Meanwhile, heat oil in a frying pan over medium heat. Cook onion, stirring, for 10 minutes or until softened. Add pistachios. Cook for 1 minute. Add honey. Cook, stirring, for 1 to 2 minutes or until onion is caramelised. Remove from heat.
  • Step 4 Spoon 1/2 the onion onto the brie. Serve with crackers and remaining onion.
