Ingredients

  • 400g penne rigate
  • 1kg vine-ripened tomatoes, finely chopped
  • 1 small red onion, finely chopped
  • 1/3 cup extra virgin olive oil,
  • 1/4 cup balsamic vinegar
  • salt and pepper
  • 1 bunch fresh basil leaves, torn

Method

  • Step 1 Cook 400g penne in a large saucepan of boiling water according to packet instructions or until al dente. Drain well and return to the pan.
  • Step 2 Combine 1kg vine-ripened tomatoes, finely chopped, 1 small red onion, finely chopped, 1/3 cup extra virgin olive oil, 1/4 cup balsamic vinegar. Season well with salt and pepper.
  • Step 3 Add the tomato mixture to the pasta with 1 bunch fresh basil leaves, torn, and toss until well combined. Serve pasta immediately.
