Ingredients

  • 1/3 cup (80ml) maple syrup
  • 1 tsp mustard powder
  • 2 tbsp Worcestershire sauce
  • 4 garlic cloves, crushed
  • 2kg Coles Australian Lamb Shoulder Roast
  • 120g Coles Brand Australian Superfood Leaf Blend
  • 1/3 cup (80ml) balsamic dressing
  • 4 Coles Bakery Rustic Rolls, to serve
  • Lemon wedges, to serve

Method

  • Step 1 Preheat a covered barbecue on medium. Alternatively, preheat oven to 200C.
  • Step 2 Combine maple syrup, mustard powder, Worcestershire sauce and garlic in a medium jug. Rub three-quarters of the mixture all over lamb. Place in a disposable baking tray. Combine remaining mixture with 1/2 cup (125ml) water. Pour into base of tray. Season. Cover tightly with foil. Roast in a covered barbecue using indirect heat, or in oven, for 2 hours or until tender, adding more water if necessary to dish.
  • Step 3 Uncover lamb. Cook for a further 15 mins or until browned. Remove lamb from barbecue. Cover with foil. Set aside for 20 mins to rest.
  • Step 4 Toss salad with balsamic dressing. Serve lamb with salad, bread rolls and lemon wedges.
