Ingredients

  • 1kg frozen shoestring fries
  • 2 tablespoons olive oil
  • 1 brown onion, finely chopped
  • 1 garlic clove, crushed
  • 1/3 cup dry white wine
  • 2kg cleaned small black mussels (see note)
  • 1/2 cup torn fresh basil leaves
  • 1 long red chilli, finely chopped

Method

  • Step 1 Preheat oven to 240°C/220°C fan-forced. Place frozen fries, in a single layer, on a large baking tray. Bake for 25 minutes until golden and crisp. Season with salt.
  • Step 2 Meanwhile, heat oil in a large saucepan over medium heat. Add onion. Cook, stirring, for 5 minutes or until softened. Stir in garlic. Cook for 30 seconds or until fragrant. Add wine. Bring to the boil. Add mussels. Cook, covered, for 3 minutes until mussels open (discard any mussels that don’t open). Stir in basil and chilli. Season with pepper.
  • Step 3 Serve mussels with fries (see note).
