Ingredients

  • 1 x 500g pkt frozen cut green beans
  • 1 x 450g btl Always Fresh Fire Roasted Peeled Whole Peppers (roasted capsicum), drained, thickly sliced
  • 80ml (1/3 cup) olive oil
  • 80ml (1/3 cup) red wine vinegar
  • 2 garlic cloves, crushed
  • 2 teaspoons dried oregano
  • 2 teaspoons caster sugar

Method

  • Step 1 Bring a large saucepan of water to the boil. Add the beans and cook for 3 minutes or until bright green and tender crisp. Refresh under cold running water. Drain.
  • Step 2 Combine the beans and roasted capsicum in a large bowl. Transfer to an airtight container.
  • Step 3 Place the oil, vinegar, garlic, oregano and sugar in a screw-top jar. Shake until well combined. Season with salt and pepper.
  • Step 4 Pour the dressing over the bean mixture and toss until well combined. Serve.
