Ingredients

  • 1/3 cup (80ml) olive oil
  • 200g speck*, rind removed, diced
  • 1 onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1/4 cup (3 tablespoons) maple syrup
  • 1/4 cup (3 tablespoons) black treacle*
  • 2 tablespoons Worcestershire sauce
  • 1/2 cup (6 tablespoons) tomato sauce (ketchup)
  • 1/4 cup (3 tablespoons) HP Sauce*
  • 800g canned borlotti beans, drained
  • 6 large slices woodfired bread
  • Grilled herbed tomatoes, to serve

Method

  • Step 1 Heat 2 tablespoons of the oil in a large saucepan over medium heat, add speck and cook for 2-3 minutes until starting to crisp, then add onion and garlic and cook for a further 2 minutes. Add the maple syrup, treacle and sauces with 100ml water and combine well. Season to taste, reduce heat to low and cook for 15 minutes until thick and syrupy. Add the beans and heat through.
  • Step 2 Meanwhile, brush the bread with remaining oil. Heat a chargrill or barbecue until hot, then cook the bread until lightly charred and crisp.
  • Step 3 Serve the beans on trenchers with pancetta-wrapped sausages (see related recipe) and tomatoes sprinkled with herbs.
