Ingredients

  • 500g beans, trimmed
  • 8 button squash, halved
  • 3 tablespoons olive oil
  • 250g cherry tomatoes
  • 1 garlic clove, finely chopped

Method

  • Step 1 Bring a large saucepan of water to the boil. Add the beans and squash. Cook for 3 minutes or just until tender. Drain well and set aside.
  • Step 2 Heat the oil in a large frying pan over a medium heat. Add the tomatoes and cook, stirring often, for 4 minutes or just until the tomatoes begin to soften. Add the garlic and cook, stirring occasionally, for 1 minute.
  • Step 3 Add the beans and squash. Toss until the vegetables are coated in the oil and heated through.
