Ingredients

  • 350g Heart Smart beef fillet, cut into 2cm cubes
  • 60ml (1/4 cup) water
  • 1 brown onion, finely chopped
  • 1 garlic clove, crushed
  • 1 tablespoon plain flour
  • 125ml (1/2 cup) dry red wine
  • 2 tablespoons tomato paste
  • Salt & freshly ground black pepper
  • 4 sheets filo pastry (Antoniou brand)
  • 2 tablespoons water, extra
  • 155g (1 cup) shelled fresh peas
  • 1 tablespoon chopped fresh chives
  • 1 garlic clove, extra
  • 2 teaspoons polyunsaturated spread, reduced salt (Becel brand)
  • Tomato sauce, to serve

Method

  • Step 1 Heat a large non-stick frying pan over high heat. Add half the beef and cook, turning occasionally, for 2 minutes or until brown all over. Transfer to a bowl. Reheat pan and repeat with remaining beef.
  • Step 2 Add water to the same pan and bring to the boil. Reduce heat to medium and add the onion and garlic. Cook, stirring, for 2 minutes or until onion is soft. Stir in the flour and cook, stirring, for 1 minute or until mixture thickens. Gradually stir in the wine and tomato paste. Increase heat to high and bring to the boil. Reduce heat to medium and add the beef. Simmer, stirring occasionally, for 10 minutes or until beef is just cooked through and sauce thickens slightly. Taste and season with salt and pepper.
  • Step 3 Meanwhile, cut filo pastry sheets in half crossways to make 8 pieces. Fold each half into quarters to make a square. Place 1 square in each base of four 10cm (base measurement) ovenproof pie dishes, allowing corners to overhang the edge of the dishes. Place another pastry square on top, rotating it slightly to cover the base and side of each dish. Brush lightly with extra water and bake in preheated oven for 10 minutes or until light golden and crisp.
  • Step 4 Meanwhile, cook peas in medium saucepan of salted boiling water for 10 minutes or until bright green and tender (see microwave tip). Drain. Place in bowl with chives, extra garlic and spread, and use a fork to roughly mash. Taste and season with salt.
  • Step 5 To serve, carefully lift pastry cases onto serving plates. Spoon the beef mixture into the cases and top with garlic peas. Serve with tomato sauce if desired.
