Ingredients

  • 200g Eureka blueberries
  • 1 1/2 tablespoons caster sugar
  • 4 slices of brioche, toasted
  • Whipped cream, to serve (see note)
  • Thyme leaves, to serve (see note)

Method

  • Step 1 Place blueberries and sugar in a frying pan over high heat. Cook, stirring, for 2-3 minutes or until blueberries start to release their juices.
  • Step 2 Top brioche slices with whipped cream. Spoon over blueberries. Sprinkle with thyme, if desired.
