Ingredients

  • 560g can of lychees in syrup, drained reserving 1/4 cup syrup
  • 4 black plums, chopped
  • 1 vanilla bean, halved, seeds scraped
  • 1/4 cup brown sugar, plus 1 tbsp extra
  • 125g fresh raspberries
  • 1 1/4 cups Carman's Original Fruit Free Muesli
  • 1/4 tsp ground cinnamon
  • 60g butter
  • Vanilla ice-cream, to serve

Method

  • Step 1 Halve lychees. Place in a frying pan or skillet with the reserved syrup, plums, vanilla bean seeds, and 1 tbs brown sugar. Stir. Bring to boil. Cover and simmer over medium-low heat for 3 minutes. Remove from heat. Stir in raspberries.
  • Step 2 Place 1 1/4 cups Carman's Original Fruit Free Muesli and cinnamon in a bowl.
  • Step 3 Melt 60g butter in a saucepan over medium heat for 3-4 minutes or until foaming and nut brown in colour. Remove from heat. Stir in 1/4 cup brown sugar. Pour over muesli mixture and stir to combine. Top fruit with crumble mixture and serve with a generous scoop of vanilla ice-cream.
