Ingredients

  • 2 teaspoons olive oil
  • 3 garlic cloves, crushed
  • 100g mild blue cheese, crumbled
  • 250g tub creme fraiche
  • 6 pink lady apples, cut into wedges, cored
  • 1 tablespoon lemon juice
  • Extra 20g blue cheese, crumbled
  • 2 celery stalks, cut into 6cm sticks

Method

  • Step 1 Heat oil in a small frying pan over medium heat. Add garlic. Cook, stirring, for 1 minute or until fragrant. Transfer to a medium bowl. Set aside for 10 minutes to cool.
  • Step 2 Add cheese and creme fraiche to garlic. Using a stick blender, blend until smooth and thickened. Place apple in a medium bowl. Drizzle with lemon juice. Toss to coat. Place dip in a serving bowl. Top with extra cheese. Serve with apple and celery.
