Ingredients

  • 1/2 cup (100g) caster sugar
  • 1/2 cup (75g) self-raising flour
  • 1/2 cup (45g) desiccated coconut, plus extra to serve
  • 1/4 cup (30g) almond meal
  • 4 eggwhites
  • 125g butter, melted
  • 1 cup (100g) fresh blueberries

Method

  • Step 1 Preheat oven to 200C. Grease twelve 1/4-cup (60ml) capacity oval friand pans. Combine sugar, flour, coconut and almond meal in a large bowl. Add eggwhites and use a wooden spoon to stir to combine. Add melted butter and stir to combine.
  • Step 2 Spoon mixture among prepared pans. Place 4-5 blueberries on top and press to indent into cake mixture. Bake in oven for 15 minutes or until a skewer inserted into the centres comes out clean. Remove from oven and place on a wire rack to cool slightly before turning out.
  • Step 3 Brush tops of friands with a little water and sprinkle with extra coconut to serve.
