Ingredients

  • 1 tablespoon extra virgin olive oil
  • 2 eschalots, finely chopped
  • 2 garlic cloves, thinly sliced
  • 1/4 cup dry white wine
  • 400g can butter beans, rinsed, drained
  • 2 bunches rocket, trimmed
  • 2 tablespoons lemon juice

Method

  • Step 1 Heat oil in a large frying pan over medium heat. Add eschalots and garlic. Cook, stirring, for 5 minutes or until tender. Add wine. Simmer until reduced by half.
  • Step 2 Add beans. Toss to combine. Cook for 2 minutes or until heated through. Add rocket. Cook for 1 minute or until just starting to wilt. Season with salt and pepper. Serve drizzled with lemon juice.
