Ingredients

  • 3 small leeks, trimmed, washed
  • 25g butter
  • 2 garlic cloves, thinly sliced
  • 2 sprigs fresh thyme
  • 2 fresh bay leaves (see tip)
  • 1 cup Massel chicken style liquid stock
  • Finely chopped fresh flat-leaf parsley leaves, to serve

Method

  • Step 1 Remove outer leaves from leeks. Cut leeks into 5cm pieces. Melt butter in a saucepan over medium heat. Add garlic, thyme and bay leaves. Cook, stirring, for 1 minute or until fragrant.
  • Step 2 Add leek and stock. Bring to the boil. Reduce heat to medium-low. Simmer, covered, for 25 minutes or until leeks are almost tender. Simmer, uncovered, for 10 minutes or until liquid has reduced. Season with pepper. Top with parsley. Serve.
