Ingredients

  • 1 tablespoon garlic-infused extra virgin olive oil (see note)
  • 4 red bullhorn peppers
  • 1 sprig fresh oregano
  • 1 cup gluten-free vegetable stock
  • 50g fetta, crumbled
  • 1 tablespoon fresh basil leaves
  • 2 teaspoons lemon zest

Method

  • Step 1 Heat oil in a large, deep frying pan over medium-high heat. Cook peppers, turning occasionally, for 10 minutes or until beginning to blister and char.
  • Step 2 Add oregano. Cook for 1 minute or until fragrant. Add stock. Cover. Cook for 12 to 15 minutes, turning halfway, or until peppers are tender.
  • Step 3 Sprinkle with fetta, basil and lemon zest. Season with salt and pepper. Serve.
