Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, finely chopped
  • 2 rashers bacon, finally diced
  • 2 tablespoons Coles Brand Tomato Paste
  • 1 x 400g can tomatoes, diced
  • 1/3 cup brown sugar
  • 1/4 cup balsamic vinegar
  • Cannellini beans, drained, rinsed
  • Thick sliced toast, to serve
  • 4 poached eggs, to serve

Method

  • Step 1 Preheat oven to 180C or 160C fan. Heat oil in a large, heatproof casserole dish to medium heat. Cook onion and garlic until translucent.
  • Step 2 Add bacon and cook for 3-4 mins. Add beans, tomato paste, tomatoes, sugar and vinegar, stir to combine and cook in oven for 1 hr, 45 mins.
  • Step 3 Remove from oven, stir through beans and cook for a further 15 mins.
  • Step 4 Serve on toast with poached egg.
