Ingredients

  • 1/2 cup tri-colour quinoa
  • 2 passionfruit, halved
  • 1 tablespoon lime juice
  • 500g piece watermelon, peeled, very thinly sliced
  • 250g strawberries, hulled, quartered
  • 125g raspberries
  • 150g cherries, pitted, halved
  • 1 jazz apple, thinly sliced crossways
  • 2 tablespoons finely shredded fresh mint leaves

Method

  • Step 1 Cook quinoa in a medium saucepan following packet directions. Drain. Refresh under cold water. Drain (see notes).
  • Step 2 Combine passionfruit pulp and lime juice in a jug. Arrange fruit on a serving platter. Top with quinoa. Drizzle passionfruit mixture over salad. Sprinkle with mint. Serve.
