Ingredients

  • 2 cups SunRice Medium Grain Brown Rice (uncooked)
  • 480g beef sausages or pork sausages
  • 2 tablespoons vegetable oil
  • 2 onions, sliced
  • 1 small red capsicum, cut into strips
  • 1 can tomatoes, chopped
  • 5 cups Massel chicken style liquid stock

Method

  • Step 1 In a saucepan heat the oil, add sausages and cook until browned and just cooked.
  • Step 2 Remove sausages from pan, place onto a chopping board, allow to cool, slice thickly.
  • Step 3 Add onions and capsicum to the saucepan, cook for a few minutes until soft while stirring occasionally.
  • Step 4 Add rice, tomatoes, stock and sausages, stir and bring to the boil.
  • Step 5 Cover pan with a lid and simmer on low heat until rice is just tender.
  • Step 6 Season with salt and pepper, stir and serve.
