Ingredients

  • 1/4 cup Cajun seasoning
  • 2 tablespoons olive oil
  • 4 (600g) Coles RSPCA approved chicken drumsticks
  • 4 (500g) Coles RSPCA approved chicken wings
  • 25g butter, melted
  • 2 tablespoons coriander leaves, finely chopped
  • 2 corn cobs, halved
  • 500g baby potatoes, cut into 1cm slices spray olive oil
  • coriander sprigs, to serve
  • 120g baby spinach
  • 4 radishes, thinly sliced
  • 1 Lebanese cucumber, sliced
  • 1/4 cup Coles Simply Less French dressing

Method

  • Step 1 Combine seasoning and oil in a small bowl. Season. Place chicken in a large glass dish or large sealable plastic bag. Pour marinade over and toss to combine. Refrigerate for 1 hour.
  • Step 2 Heat a large, lightly oiled, non-stick frying pan, or flat barbecue plate, on medium-high. Cook chicken, turning frequently, for 20-25 minutes or until browned and cooked through.
  • Step 3 Meanwhile, combine butter and coriander in a small bowl. Season. Preheat a lightly oiled barbecue grill or chargrill on medium-high. Brush corn with the butter mixture. Cook on grill for 10-12 minutes or until tender and lightly charred. Transfer to a platter. Spray potato slices lightly with oil and cook on grill for 10-12 minutes or until tender.
  • Step 4 To make the salad, combine spinach, radish and cucumber in a bowl. Drizzle with dressing.
  • Step 5 Serve the chicken with corn, potatoes, salad and coriander sprigs.
