Ingredients

  • 4 x 180g white fish fillets (such as ling, perch or blue-eye)
  • 2 tablespoons olive oil
  • Steamed corn cobs, to serve
  • Jasmine rice, to serve

Cajun spice rub

  • 2 tablespoons sweet paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon McCormick Turmeric
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon caster sugar
  • 1 teaspoon sea salt

Method

  • Step 1 Make cajun spice rub: Place all ingredients in a bowl. Stir until well combined. Spread onto a baking tray.
  • Step 2 Pat fish fillets dry with paper towel. Press both sides fish into spice rub, 1 at a time, ensuring each fillet is evenly coated. Shake off excess.
  • Step 3 Heat oil in a large, non-stick frying pan over medium heat. Cook fish, in batches, for 3 to 4 minutes each side or until just cooked through. Serve with corn and rice.
