Ingredients

  • 1 small avocado, chopped
  • 1 tablespoon fresh lime juice
  • 12 blue tortilla chips
  • 1 1/2 tablespoon black beans, rinsed, drained
  • 1 tablespoon finely chopped red onion
  • 12 green prawns, peeled, tails intact
  • 1 tablespoon Cajun spice mix
  • Fresh coriander leaves, to serve
  • Lime wedges, to serve

Method

  • Step 1 Use a fork to coarsely mash the avocado. Add the lime juice and mash to combine. Season.
  • Step 2 Arrange tortilla chips on a platter. Top with avocado mixture, beans and onion.
  • Step 3 Place prawns and spice mix in a bowl and toss to combine. Heat a large non-stick frying pan over medium-high heat. Spray with oil. Cook prawns for 1 minute each side or until cooked through.
  • Step 4 Place prawns on corn chips and top with coriander. Serve with lime wedges.
