Ingredients

  • 600g cauliflower, trimmed, cut into large florets
  • 1 1/2 tablespoons extra virgin olive oil, plus 160ml, plus extra to drizzle
  • 2 teaspoons cumin powder
  • 2 garlic cloves, chopped
  • 80ml (1/3 cup) tahini
  • 60ml (1/4 cup) lemon juice
  • 60ml (1/4 cup) warm water
  • Smoked paprika, to serve

Method

  • Step 1 Preheat oven to 200C/180C fan forced. Place florets on a baking tray and drizzle with oil. Sprinkle with cumin. Roast for 25 minutes or until tender. Set aside to cool slightly.
  • Step 2 Transfer cauliflower mixture to a food processor. Add garlic, tahini, lemon juice, extra oil and water. Process until smooth. Serve drizzled with olive oil and sprinkled with smoked paprika.
