Ingredients

  • 1 x 300g focaccia bread, halved, split
  • 1/4 cup black olive tapenade
  • 8 slices (180g) chargrilled eggplant
  • 190g jar chargrilled zucchini in oil, drained
  • 1/2 cup (110g) semi-dried tomatoes
  • 60g provolone cheese, thinly sliced

Method

  • Step 1 Preheat sandwich press. Spread cut sides of focaccia with tapenade. Top bases with eggplant, zucchini, tomatoes and provolone. Season with pepper.
  • Step 2 Sandwich with focaccia tops and place in sandwich press. Cook for 4 to 5 minutes or until toasted and heated through. Serve.
