Ingredients

  • 500g cherries, pitted
  • 1L Coles brand vanilla ice-cream, softened slightly
  • 3 dark Arnott's Tim Tams, crushed
  • 1L Coles Brand chocolate choc chip ice cream, softened slightly

Method

  • Step 1 Process half the cherries in a food processor until pureéd. Spoon one third of the vanilla ice-cream into a chilled 1-litre capacity dish, making a rough layer. Drizzle with half the cherry purée, and sprinkle with half the crushed biscuits.
  • Step 2 Spoon in another layer of ice-cream, drizzle with the remaining cherry purée and sprinkle over the remaining crushed biscuits. Add a final layer of ice-cream. Cover with plastic wrap and return to the freezer for 4 hours, or until firm.
  • Step 3 For the chocolate chip ice-cream, chop the remaining cherries. Spoon the ice-cream into a large chilled bowl and mix the cherries through using a large metal spoon. Transfer to a chilled 1-litre capacity dish and press in firmly. Smooth the surface and cover with plastic wrap. Freeze for 4 hours, or until firm.
