Ingredients

  • 1 tablespoon olive oil
  • 500g skinless beef sausages (chevapi)
  • 250g couscous
  • 500ml (2 cups) boiling water
  • 2 cups firmly packed fresh basil leaves
  • 200g ctn tzatziki

Method

  • Step 1 Heat the oil in a large frying pan over medium-high heat. Cook the sausages, turning occasionally, for 4-5 minutes or until golden and cooked through. Transfer to a plate, reserving the oil.
  • Step 2 Meanwhile, place the couscous in a large heatproof bowl. Pour over the water. Cover and set aside for 5 minutes or until the liquid is absorbed. Add the reserved oil and season with salt and pepper. Use a fork to separate the grains.
  • Step 3 Thickly slice the sausages diagonally. Add the sausage and basil to the couscous and toss to combine.
  • Step 4 Divide the couscous mixture among serving bowls. Top with tzatziki.
