Ingredients

  • 500g chicken mince
  • 1 egg, lightly beaten
  • 1 cup fresh breadcrumbs
  • 1 tablespoon MasterFoods® Barbeque Sauce
  • 1/4 cup fresh chives, finely chopped
  • 7 rashers streaky bacon, rind removed
  • 2 tablespoons extra virgin olive oil

Ranch Dipping Sauce

  • 1/3 cup whole-egg mayonnaise
  • 1/3 cup sour cream
  • 1/4 cup buttermilk (see note)
  • 75g Danish blue cheese, crumbled

Method

  • Step 1 Place mince, egg, breadcrumbs, barbecue sauce and 2 tablespoons chives in a bowl. Season with salt and pepper. Mix well. Roll level tablespoons of mince mixture into oval shaped meatballs.
  • Step 2 Cut each bacon rasher in half crossways, then in half lengthways (you'll only need 26 pieces). Wrap 1 piece of bacon around each meatball, securing with a toothpick.
  • Step 3 Heat oil in a frying pan over medium heat. Cook meatballs, in batches, turning, for 8 to 10 minutes or until browned all over and cooked through. Drain on paper towel.
  • Step 4 Meanwhile, make Ranch Dipping Sauce; Place mayonnaise, sour cream and buttermilk in a bowl. Stir to combine. Season with salt and pepper. Stir in remaining chives and cheese.
  • Step 5 Serve meatballs with dipping sauce.
