Ingredients

  • 1 tablespoon olive oil
  • 4 (about 200g each) single chicken breast fillets
  • 250g seedless green grapes, picked, halved lengthways
  • 250g flat green beans, topped, halved diagonally
  • 2 red oak lettuces, leaves separated, washed, dried, large leaves torn
  • 160g blue cheese (King Island Dairy Bass Strait brand), thinly sliced

Honey walnut dressing

  • 60ml (1/4 cup) olive oil
  • 60g (1/2 cup) walnut pieces
  • 60ml (1/4 cup) white wine vinegar
  • 1 1/2 tablespoons honey
  • Salt & freshly ground black pepper

Method

  • Step 1 To make the honey walnut dressing, heat the oil in a large frying pan over medium heat. Add the walnuts and cook, stirring, for 1-2 minutes or until lightly toasted. Transfer the oil and walnuts to a heatproof jug and set aside for 10 minutes to cool. Add the vinegar and honey, and whisk with a fork until well combined. Taste and season with salt and pepper.
  • Step 2 Heat the oil in a large frying pan over medium-high heat. Add the chicken and cook for 4-5 minutes each side or until golden and cooked through. Transfer to a plate and set aside for 5 minutes to rest. Thinly slice the chicken across the grain. Add the grapes to the pan and cook, tossing, over medium heat for 5 minutes or until heated through.
  • Step 3 Meanwhile, cook beans in a saucepan of boiling water for 3 minutes or until bright green and tender crisp. Refresh under cold running water. Drain well.
  • Step 4 Arrange the chicken, beans, grapes, lettuce and blue cheese on serving plates. Drizzle with the honey walnut dressing and serve immediately.
