Ingredients

  • 400g dried farfalle pasta
  • 1 barbecued chicken
  • 190g jar sun-dried tomato pesto
  • 70g packet baby rocket leaves
  • 100g parmesan, shaved, to serve

Method

  • Step 1 Cook pasta in a large saucepan of boiling salted water, following packet directions, until tender.
  • Step 2 Meanwhile, remove chicken from bones. Discard skin and bones. Shred chicken flesh.
  • Step 3 Drain pasta, reserving 2 tablespoons of cooking water. Return pasta and reserved water to saucepan. Add pesto. Toss well to combine.
  • Step 4 Add chicken, rocket, and salt and pepper. Toss over low heat until rocket just starts to wilt. Divide pasta between bowls. Top with parmesan. Serve.
