Ingredients

  • 4 (about 650g) desiree potatoes, peeled, chopped
  • 125g chopped-leaf frozen spinach, thawed
  • 60ml (1/4 cup) milk
  • 25g reduced-fat dairy spread (Devondale brand)
  • Salt & freshly ground black pepper
  • 4 (about 150g each) small single chicken breast fillets
  • 1 x 80g pkt garlic & fine herb cream cheese (Boursin brand)
  • 2 eggs, lightly whisked
  • 90g (1 cup) dried (packaged) breadcrumbs
  • 60ml (1/4 cup) olive oil

Method

  • Step 1 Cook potatoes in a saucepan of salted boiling water for 5-8 minutes or until tender. Add spinach and cook for 2 minutes. Drain. Return to pan with milk and dairy spread. Use a masher or fork to mash until smooth. Season with salt and pepper.
  • Step 2 Meanwhile, use a sharp knife to cut into the side of each chicken breast to create a pocket. Cut cheese into four slices. Place a slice in each chicken pocket and secure with a toothpick.
  • Step 3 Place egg mixture and breadcrumbs in separate bowls. Dip chicken in egg, then breadcrumbs, pressing firmly to coat.
  • Step 4 Heat oil in a frying pan over medium-high heat. Add chicken and cook for 4 minutes each side or until golden brown and cooked through. Remove toothpicks. Serve with spinach mash.
