Ingredients

  • 225g ciabatta bread, chopped
  • 3 teaspoons finely chopped fresh thyme leaves
  • 1/4 cup finely chopped fresh flat-leaf parsley leaves
  • 1 egg
  • 3 (180g each) chicken breast fillets, trimmed
  • 2 tablespoons olive oil

Rocket salad

  • 80g baby rocket
  • 2 tablespoons pine nuts, toasted
  • 1/4 cup sun-dried tomatoes in oil, drained, thinly sliced
  • 1/4 cup shaved parmesan cheese

Method

  • Step 1 Process bread until it resembles coarse breadcrumbs (you'll need 3 cups). Combine breadcrumbs, thyme and parsley on a plate. Lightly beat egg in a shallow bowl.
  • Step 2 Cut each chicken breast on an angle into four 1.5cm-thick slices. Dip 1 chicken piece in egg. Dip in breadcrumb mixture, pressing to coat. Place on a baking tray. Coat remaining chicken.
  • Step 3 Heat half the oil in a frying pan over medium-high heat. Cook chicken, in batches, for 3 minutes each side or until cooked through. Transfer to a plate. Cover to keep warm.
  • Step 4 Meanwhile, make rocket salad. Combine rocket, pine nuts, tomato and cheese in a bowl. Serve chicken schnitzels with salad.
