Ingredients

  • 2 tablespoons extra virgin olive oil
  • 4 (about 800g) chicken breast fillets
  • 100g green beans, trimmed
  • 100g butter beans, trimmed
  • 100g snow peas, trimmed
  • 1 cup (150g) fresh peas or frozen peas
  • 2 vine-ripened tomatoes, finely chopped
  • 1/2 red onion, finely chopped
  • 1/2 cup (85g) pimento-stuffed green olives, finely chopped

Method

  • Step 1 Heat 2 teaspoons of oil in a large frying pan over medium heat. Season chicken well with salt and pepper. Add to the pan and cook for 3-4 minutes each side or until golden and cooked through. Transfer to a plate and cover with foil. Set aside for 5 minutes to rest.
  • Step 2 Meanwhile, cook the beans, snow peas and peas in a medium saucepan of salted boiling water for 1-2 minutes or until bright green and tender crisp. Refresh under cold, running water. Drain well.
  • Step 3 Combine the tomato, onion, olives and remaining oil in a small bowl. Taste and season with salt and pepper.
  • Step 4 Thickly slice the chicken. Divide the bean mixture among serving bowls. Top with chicken and spoon over the tomato dressing to serve.
