Ingredients

  • 4 small chicken breast fillets, trimmed
  • 8 slices prosciutto
  • 400g small washed potatoes, unpeeled, thinly sliced
  • 8 sage leaves
  • 2 teaspoons olive oil
  • cracked black pepper

Method

  • Step 1 Preheat oven to 200°C. Press two sage leaves into the top of each chicken fillet and sprinkle with pepper. Wrap each chicken fillet with two slices of prosciutto, in a diagonal direction, to completely cover. Set aside.
  • Step 2 Place potatoes in a large bowl and sprinkle with pepper and olive oil. Toss to combine.
  • Step 3 Spread potatoes over the base of a large baking dish lined with baking paper and spray with olive oil. Place chicken fillets on top and cook for 15-20 minutes or until chicken is golden and cooked through. Remove chicken from baking dish, cover with foil and rest for 5 minutes.
  • Step 4 To serve, divide potatoes between serving plates and serve with chicken.
