Ingredients

  • 2 x 750ml bottles red wine (such as cabernet sauvignon)
  • 2/3 cup caster sugar
  • 2 cinnamon sticks, split in half lengthways
  • 3 whole star anise (see note)
  • 1 vanilla bean, cut in half lengthways

Method

  • Step 1 Place wine, sugar, cinnamon and star anise in large saucepan. Using a sharp knife, scrape seeds from vanilla bean. Add seeds and bean to pan. Heat over low heat, stirring, for 15 minutes or until sugar dissolves. (Do not boil or you will lose the alcohol content.)
  • Step 2 Remove pan from heat. Cover. Set aside for 1 to 2 hours to allow flavours to infuse. Strain into a jug, discarding spices and bean. Cover. Refrigerate overnight or until chilled.
  • Step 3 Pour wine into glasses. Serve with Pita crisps with dip (related recipe).
