Ingredients

  • 50g day old bread, crust removed
  • 6 med tomatoes, roughly chopped
  • 1 Lebanese cucumber, peeled and chopped
  • 1 small red capsicum, deseeded and chopped
  • 1L Campbell's Real Soup Base – Spanish
  • Chilli sauce, to taste
  • Extra tomato, to garnish
  • Extra cucumber, to garnish
  • Olive oil, to garnish

Method

  • Step 1 Place bread in a small bowl and add 1/2 cup of the Campbell’s Soup Base. Set aside for 5 minutes to soak.
  • Step 2 Place soaked bread, tomatoes, cucumber and capsicum in the bowl of the food processor or blender and process until well combined and almost smooth. Add the Campbell’s Real Soup Base. Add chilli sauce to taste.
  • Step 3 Pour soup into bowls and garnish with a drizzle of olive oil, extra diced tomato and cucumber.
