Ingredients

  • 2 tablespoons shredded fresh basil leaves
  • 2 small red chillies, finely chopped
  • 2 garlic cloves, crushed
  • 1/3 cup lemon juice
  • 1 1/2 tablespoons olive oil
  • 4 lamb leg chops
  • 20g butter
  • 3 red onions, halved, thinly sliced
  • 1 tablespoon brown sugar
  • 2 tablespoons balsamic vinegar
  • 250g cherry tomatoes

Method

  • Step 1 Combine basil, chilli, garlic, lemon juice and oil in a shallow glass or ceramic dish. Add chops. Turn to coat. Cover and refrigerate for 2 hours, if time permits.
  • Step 2 Melt butter in a frying pan over medium heat. Cook onion, stirring, for 10 minutes or until golden and softened. Add sugar and vinegar. Cook, stirring occasionally, for 5 minutes or until caramelised.
  • Step 3 Meanwhile, heat a large frying pan over medium-high heat. Remove lamb from marinade. Discard marinade. Cook lamb for 4 to 5 minutes each side for medium or until cooked to your liking. Transfer to a plate. Stand, covered, for 5 minutes.
  • Step 4 Add tomatoes to pan. Cook for 2 to 3 minutes, turning, or until softened and heated through. Season with salt and pepper. Serve lamb with onion mixture and tomatoes.
