Ingredients

  • 2 squid tubes (about 200g each)
  • 100ml olive oil
  • Salt & freshly ground pepper
  • 2 x 200g pkts fried egg noodles
  • 4 garlic cloves, finely chopped
  • 2 large red chillies, deseeded, finely chopped
  • 1 stalk lemon grass, pale section only, finely chopped
  • 1 lime, rind finely grated
  • 1/3 cup fresh coriander leaves

Method

  • Step 1 Cut the squid tubes in half horizontally, then cut crossways into 1cm wide strips. Place in a bowl. Add 1 tablespoon oil and season with salt and pepper. Toss until well coated.
  • Step 2 Cook the noodles in a saucepan of boiling water according to packet instructions. Drain well.
  • Step 3 Meanwhile, heat a large frying pan over a high heat. In two batches, cook the squid, tossing, for 2-3 minutes until it turns white and slightly golden. Transfer to a plate and cover with foil.
  • Step 4 Reduce to a medium heat. Heat the remaining oil. Add the garlic and cook for about 30 seconds. Add the chilli, lemon grass and lime rind and cook for about 1 minute or until aromatic. Add the noodles and toss until heated through. Add the squid and coriander. Toss until well combined. Serve immediately.
