How to make Chilli caramel popcorn

Ingredients

  • 100g bag butter-flavoured microwave popcorn
  • 100g butter, chopped
  • 2/3 cup caster sugar
  • 1 tablespoon honey
  • 1 long red chilli, finely chopped

Method

  • Step 1 Line a large baking tray with baking paper.
  • Step 2 Cook popcorn following packet directions. Transfer to a large bowl, discarding any un-popped corn.
  • Step 3 Place butter, sugar and honey in a saucepan over medium heat. Cook, stirring, for 3 to 4 minutes or until sugar has dissolved. Bring mixture to the boil. Boil, without stirring, for 5 to 7 minutes or until light golden.
  • Step 4 Stir in chilli (see notes). Working quickly, pour caramel mixture over popcorn, stirring to coat. Spread mixture over prepared tray. Set aside to cool completely. Break into pieces. Serve.
