Ingredients

  • 250g chorizo sausages, cut into 1cm thick slices
  • 2 medium red onions, peeled, cut into thin wedges
  • 2 red capsicums, seeded, sliced thickly
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh lemon thyme
  • 1 tablespoon olive oil
  • 80g baby mesclun salad mix
  • 2 Ingham Cooked Chilli & Garlic Chicken Halves
  • Lemon wedges, to serve

Method

  • Step 1 Preheat oven to 180°C/160°C fan-forced. Place chorizo, onion, capsicum, rosemary, thyme and oil in a large baking dish. Toss gently to combine. Bake for 25 minutes or until vegetables are golden and tender.
  • Step 2 Meanwhile, cut chicken into 4 portions. Reheat chicken in the oven for 10 to 15 minutes. Place on serving plates. Serve with chorizo mixture, salad leaves and lemon wedges.
