Ingredients

  • 1 egg yolk
  • 2 teaspoons caster sugar
  • 1/2 teaspoon vanilla essence
  • 20g dark chocolate, finely grated
  • 1/2 cup fresh berries or thawed frozen berries
  • 2 teaspoons berry jam
  • 2 egg whites, at room temperature
  • 1 1/2 tablespoons caster sugar
  • 5g butter

Method

  • Step 1 Combine egg yolk, sugar, vanilla and chocolate. Place berries and jam in a pan. Toss over medium heat for 1 min.
  • Step 2 Use electric beaters to whisk egg whites until frothy. Gradually whisk in sugar until firm peaks appear. Stir 1/4 of the egg whites into chocolate mixture and then fold in remaining whites.
  • Step 3 Melt butter in a small (16cm base) non-stick frying pan over medium heat. Spoon in chocolate mixture. Cook for 3 mins. Place under a grill preheated on medium-high for 1 min or until set.
  • Step 4 Spoon berry mixture over one side of omelette. Fold omelette in half to enclose the filling, dust with icing sugar. Serve.
