Ingredients

  • 300g fresh ricotta
  • 2 tablespoons honey
  • 30g dark chocolate, finely grated
  • 1 teaspoon grated orange rind
  • 24 wonton wrappers
  • 1 egg, lightly whisked
  • Oil, for deep frying
  • Vanilla syrup
  • 11/4 cups (165g)caster sugar
  • 11/4 cups (310ml)water
  • 2 vanilla beans, split lengthways

Method

  • Step 1 Place ricotta, honey, chocolate and orange rind in a small bowl. Use electric beaters to beat until smooth. Lay wonton wrappers out in a single layer on a clean surface. Spoon teaspoonfuls of the mixture into the centre of each wonton. Brush edges with egg and press together to seal. You want to make sure the wontons are well sealed or they will open when deep frying.
  • Step 2 To make syrup, place sugar and water in a large saucepan. Scrape seeds of the vanilla beans into pan, then add vanilla pods. Stir over low heat until sugar dissolves. Bring to the boil. Boil, uncovered, for 5-8 minutes or until reduces and thickens slightly – becomes a syrup consistency. Set aside.
  • Step 3 Heat oil in a large saucepan or wok over medium-high heat. Cook 6 wontons at a time and cook for 2-3 minutes or until wontons are light golden. Drain on paper towel and repeat with the remaining wontons.
  • Step 4 Add the wontons to the warm syrup and spoon over the syrup to coat. Set aside in the syrup for 2-3 minutes. Divide the wontons among serving bowls. Spoon over a little of the syrup and serve immediately.
